Skillet Tuscan Sausage & White Beans
Creamy, garlicky, and loaded with Italian comfort, this one-skillet wonder delivers big “Tuscan kitchen” flavor with campground-friendly ease. It’s hearty without being heavy and fancy without being fussy.
Ingredients
- 1 lbs Italian sausage (mild or spicy), casings removed
- 1 Tbsp olive oil (if needed)
- 1 small onion, diced
- 3 cloves garlic, minced
- ½ tsp dried Italian seasoning
- ¼ tsp crushed red pepper flakes (optional)
- Salt & black pepper, to taste
- ½ cup chicken broth
- ½ cup heavy cream
- 1 (15 oz) can cannellini or Great Northern beans, drained & rinsed
- ⅓ cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- ¼ cup grated Parmesan cheese
Directions
- Heat a large skillet over medium heat. Add sausage and cook, breaking it up, until browned and fully cooked. Remove sausage and set aside.
- If the pan is dry, add olive oil. Sauté onion until soft, about 3–4 minutes. Add garlic and cook 30 seconds until fragrant.
- Stir in Italian seasoning and red pepper flakes. Season lightly with salt and pepper.
- Pour in chicken broth, scraping up any browned bits. Let simmer for 2 minutes.
- Add heavy cream, beans, sun-dried tomatoes, and cooked sausage. Stir to combine.
- Simmer gently for 5–7 minutes until slightly thickened.
- Stir in spinach and cook until just wilted.
- Finish with Parmesan cheese. Taste and adjust seasoning.
