Savory Mushroom & Apple Skillet with White Beans and Thyme
A one-skillet wonder that blends earthy, sweet, and hearty in the most magical late-September way.

- Mushrooms give us that earthy fall flavor
- White beans = hearty protein without needing meat
- It’s rustic, fast, and classy as heck. Serve it on your best camp plate.
Ingredients (Serves 3–4)
- 2 tbsp olive oil
- 1 small yellow onion, thinly sliced
- 2 cloves garlic, minced
- 1 apple (Honeycrisp or Gala), chopped
- 8 oz mushrooms (cremini or baby bella), sliced
- 1 (15 oz) can white beans (cannellini or navy), drained & rinsed
- 1/2 tsp dried thyme (or 1 tsp fresh)
- 1/2 tsp smoked paprika
- Salt & pepper to taste
- Optional: splash of apple cider vinegar or lemon juice to finish
- Optional garnish: chopped parsley, parmesan, or a fried egg on top
Instructions
- Heat olive oil in a large skillet over medium heat. Add onion and sauté 2–3 minutes until softened.
- Add garlic, apples, and mushrooms. Cook 5–6 minutes, until mushrooms are browned and apples begin to soften.
- Stir in beans, thyme, smoked paprika, salt, and pepper. Cook 2–3 more minutes until warmed through.
- Add a splash of apple cider vinegar or lemon juice to brighten.
- Serve warm in bowls with crusty bread or over cooked rice/quinoa. Garnish with your fave toppings.
