Maple Dijon Chicken Pot Pie with Sweet Potato Crust
This isn’t your average pot pie—it’s November in a skillet. Tender chicken, carrots, and peas swim in a silky maple-Dijon cream sauce, all tucked under a layer of mashed sweet potatoes instead of pastry. It’s creamy, cozy, a little tangy, and has just enough sweetness to make you go back for seconds (and thirds, no judgment).
Ingredients
For the filling:
- 2 tablespoons butter or olive oil
- 1 small onion, diced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 2 cloves garlic, minced
- 2 tablespoons flour (or cornstarch for gluten-free)
- 1 cup chicken broth
- 1/2 cup milk or cream
- 2 tablespoons Dijon mustard
- 1 tablespoon maple syrup
- 2 cups cooked chicken, shredded or cubed
- 1/2 cup frozen peas
- 1 teaspoon fresh thyme (or ½ tsp dried)
- Salt and pepper to taste
For the sweet potato topping:
- 2 medium sweet potatoes, peeled and cubed
- 2 tablespoons butter
- 1–2 tablespoons milk (as needed for texture)
- Salt and pepper to taste
Instructions
- Cook the sweet potatoes:
Boil or steam sweet potato cubes until tender, about 10–12 minutes. Drain and mash with butter, milk, salt, and pepper. Set aside. - Make the filling:
In a large skillet, melt butter over medium heat. Add onion, carrots, and celery, cooking until softened (about 5–7 minutes). Stir in garlic and cook 30 seconds more. - Create the sauce:
Sprinkle flour over the veggies and stir well. Slowly pour in chicken broth while stirring, then add milk. Simmer until the sauce thickens slightly. - Flavor it up:
Stir in Dijon mustard, maple syrup, thyme, salt, and pepper. Add the chicken and peas; simmer a few minutes more until heated through. - Assemble:
Pour the chicken filling into a greased 9-inch baking dish (or oven-safe skillet). Spread mashed sweet potatoes evenly on top. - Bake:
Broil or bake at 400°F for about 15–20 minutes, until the top gets lightly golden and the filling bubbles. - Serve:
