Instant Pot Salsa Chicken
Instant Pot Salsa Chicken (3 Ingredients!)
Serves: 4
Prep Time: 5 mins
Cook Time: 12 mins under pressure (plus 10 mins natural release)
Appliance: Instant Pot© (or other pressure cooker)
Ingredients:
- 1.5–2 lbs boneless, skinless chicken breasts or thighs
- 1 jar (16 oz) of your favorite salsa (mild or spicy)
- 1 tsp cumin or taco seasoning (optional for extra flavor)
Directions:
- Place chicken in the Instant Pot.
- Pour salsa over the chicken. Add seasoning if desired.
- Close the lid, set valve to “Sealing,” and cook on High Pressure for 12 minutes.
- Allow 10-minute natural release, then switch to quick release.
- Shred the chicken right in the pot using two forks. Let it soak in the juices for extra flavor.
How to Serve:
- In lettuce wraps or low-carb tortillas
- Over cauliflower rice or shredded cabbage
- With avocado, lime, and chopped cilantro on top
- Cold the next day in a salad or wrap
