Easy Campfire Sausage and Eggs
Here’s a super easy and satisfying campfire breakfast recipe perfect for RVers or tent campers alike—minimal prep, easy to clean up, and packed with flavor.
Campfire Sausage & Egg Foil Packets
Serves: 2–4
Prep Time: 10 minutes
Cook Time: 15–20 minutes over hot coals
Ingredients:
- 4 large eggs
- 1 cup pre-cooked breakfast sausage (links or crumbled)
- 1 cup shredded cheese (cheddar, pepper jack, etc.)
- 1 cup diced potatoes or frozen hash browns (thawed)
- 1/2 bell pepper, diced (optional)
- 1 tbsp olive oil or butter
- Salt & pepper to taste
- Foil & cooking spray
Directions:
- Prep foil: Tear 2 large sheets of heavy-duty aluminum foil (double-layer if needed). Spray lightly with cooking spray or rub with oil.
- Layer ingredients: In the center of each foil packet, layer potatoes, sausage, and optional veggies. Crack 2 eggs over the top of each, season with salt & pepper, and sprinkle with cheese.
- Seal foil: Fold up the sides to create a sealed packet—leave a bit of air space for steam.
- Cook: Place packets on hot campfire coals or a grill grate over the fire. Cook for 15–20 minutes, turning halfway through.
- Check doneness: Carefully open one to check that eggs are cooked to your preference.
- Serve hot, right from the foil—no plates needed!
