Creamy White Chicken Chili with Roasted Green Chiles

Ingredients
- 1 lb boneless, skinless chicken breasts or thighs, diced
- 1 Tbsp olive oil
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp chili powder
- ½ tsp dried oregano
- ¼ tsp smoked paprika
- Salt & black pepper, to taste
- 2 cups chicken broth
- 1 (15 oz) can white beans (Great Northern or cannellini), drained & rinsed
- 1 (15 oz) can hominy, drained & rinsed
- 1 (4 oz) can roasted green chiles
- 4 oz cream cheese, cubed
- Juice of ½ lime
Directions
- Heat olive oil in a large pot over medium heat. Add chicken, season lightly with salt and pepper, and cook until just browned. Remove and set aside.
- In the same pot, add onion and sauté until soft, about 3–4 minutes. Add garlic and cook 30 seconds until fragrant.
- Stir in cumin, chili powder, oregano, and smoked paprika. Toast spices for about 30 seconds.
- Pour in chicken broth, scraping up any browned bits. Add beans, hominy, green chiles, and the cooked chicken.
- Bring to a gentle simmer. Add cream cheese cubes and stir until fully melted and creamy.
- Simmer uncovered for 15–20 minutes, stirring occasionally, until slightly thickened.
- Finish with lime juice. Taste and adjust seasoning.
