Cozy Shepherd’s Pie Skillet (No Oven Needed)
All the comfort of classic shepherd’s pie—savory meat, tender veggies, and creamy mashed potatoes—made entirely in one skillet. No oven, no stress, just warm, hearty goodness perfect for chilly nights on the road.
Ingredients
- 1 lbs ground beef or ground turkey
- 1 Tbsp olive oil (if needed)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 1 tsp Worcestershire sauce
- 1 tsp tomato paste
- ½ tsp dried thyme
- ½ tsp dried rosemary (optional)
- Salt & black pepper, to taste
- ¾ cup beef or chicken broth
- 1 cup prepared instant mashed potatoes
- 2 Tbsp butter
- ¼ cup milk (or half-and-half)
- Optional garnish: chopped parsley or shredded cheddar
Directions
- Heat a large skillet over medium heat. Add ground meat and cook until browned, breaking it up as it cooks. Drain excess fat if needed.
- Add onion and sauté 3–4 minutes until softened. Stir in garlic and cook 30 seconds.
- Add frozen vegetables, Worcestershire sauce, tomato paste, thyme, rosemary, salt, and pepper. Stir well.
- Pour in broth and simmer 5–7 minutes until slightly thickened.
- Meanwhile, prepare instant mashed potatoes according to package directions, stirring in butter and milk for extra creaminess.
- Spoon mashed potatoes over the meat mixture and gently spread to cover.
- Cover skillet and cook on low for 5 minutes, allowing everything to heat through.
- Garnish if desired and serve hot.
