Cheesy Taco-Stuffed Potatoes
Ingredients (serves 2–3):
- 2 large potatoes or sweet potatoes
- 1/2 lb ground beef or turkey
- 1 packet taco seasoning (or chili powder + cumin + paprika + garlic powder)
- 1/2 cup shredded cheddar or pepper jack
- Toppings: sour cream or Greek yogurt, salsa, avocado, chopped cilantro
Instructions:
- Microwave or bake potatoes until tender (microwave ~8–10 mins, flipping halfway).
- Brown the ground beef/turkey in a skillet, drain excess fat, stir in taco seasoning + splash of water.
- Slice open the potatoes, fluff the insides with a fork, and pile in the taco meat.
- Sprinkle cheese on top, let it melt, then add your favorite toppings.
