Campfire Berries and Cream
Easy, dreamy, and totally RV kitchen (or campfire) approved!
Whether you’re winding down after a hike or just craving something sweet under the stars, this Campfire Berries & Cream treat is a fuss-free crowd-pleaser. Juicy berries, warm and bubbling from the fire, meet cool whipped cream in a dessert that’s as easy as it is elegant.
Campfire Berries & Cream Foil Packets
Ingredients:
- 1 cup fresh strawberries, halved
- 1/2 cup fresh blueberries
- 1/2 cup fresh raspberries
- 2 tsp lemon juice
- 1–2 tbsp granulated sweetener (sugar or sugar-free alternative)
- 1/2 tsp vanilla extract
- 1 tbsp butter, cut into small pieces
- Heavy-duty aluminum foil
- Optional: crushed graham crackers or granola
- Optional: whipped cream or vanilla yogurt for topping
Instructions:
- Preheat the campfire or grill to medium heat.
- Tear off a sheet of foil (about 12–14 inches) and place all the berries in the center.
- Sprinkle the lemon juice, sweetener, and vanilla extract over the berries. Dot with the butter.
- Fold the foil into a packet, sealing tightly to trap the steam.
- Place on grill grate or campfire, and cook for 8–10 minutes until the berries are warm and bubbling.
- Carefully open the foil packet, top with whipped cream or yogurt, and sprinkle with crushed graham crackers or granola for crunch.
