Breakfast Quesadillas with Sausage & Cheese
This recipe uses one skillet, comes together fast, and is easy to customize with whatever you have on hand. It’s warm, filling, and great for eating at the table or on the go.
Ingredients (Serves 2–4)
- 1 lb breakfast sausage (pork, turkey, or plant-based)
- 6 large eggs
- ¼ cup milk (optional, for fluffier eggs)
- Salt & pepper, to taste
- 1 cup shredded cheese (cheddar, Colby Jack, or Mexican blend)
- 4 large flour tortillas
- 1 tablespoon butter or oil
Optional add-ins:

Diced bell peppers

Onions
-
Spinach
-
Salsa or hot sauce
-
Avocado slices
Instructions
- Cook the sausage. Heat a skillet over medium heat. Cook sausage until browned and cooked through. Remove from pan and set aside.
- Scramble the eggs. Whisk eggs with milk, salt, and pepper. In the same skillet, melt butter and scramble eggs until just set. Don’t overcook.
- Assemble the quesadillas. Lay a tortilla flat in the skillet. Sprinkle cheese on one half, then add sausage and eggs. Top with a little more cheese and fold the tortilla over.
- Toast until golden. Cook 2–3 minutes per side until tortilla is crispy and cheese is melted.
- Serve. Cut into wedges and serve warm. Add salsa or avocado if desired.
