Instant Pot Keto-Friendly Beef Stew
Tender chunks of beef, savory mushrooms, and hearty vegetables simmer together in a rich, deeply flavorful broth for the ultimate keto-friendly comfort meal. Made easy in the Instant Pot, this cozy beef stew delivers all the warmth of a classic favorite—without the carbs—perfect for chilly nights on the road.
Ingredients
- 4 TBSP olive oil
- 3 lbs chuck roast cut into 2 inch cubes
- 1/2 tsp salt
- 1/4 tsp pepper
- 1 medium yellow onion, diced
- 2 large carrots, chunked
- 2 stalks celery, chunked
- 10 radishes cut into quarters or halves (replaces potatoes)
- 8 oz cremini mushrooms, quartered
- 4 cloves garlic, minced
- 1/2 tsp thyme
- 3 TBSP tomato paste
- 2 cups beef broth
Instructions
- Sauté the meat:
Add 2 TBSP oil into Instant Pot, set to sauté. Add beef, season with salt and pepper. Brown on all sides. Remove beef and liquid and set aside. - Sauté the vegetables:
Add 2 TBSP oil and add onion, carrot, celery, radish, mushroom, garlic and thyme. Sauté for 10 minutes. - Finish:
Add tomato paste, pour in broth and add meat. - Finish:
Set Instant Pot to Stew setting on high for 35 minutes. Let naturally release for 10-15 minutes.
