Easy Inside-Out Egg Roll
After a long day on the road in the RV—snacking on cold grab-and-go bites and juggling travel stops—this Inside-Out Egg Roll is exactly what I crave. It’s quick, easy, and uses just a few ingredients.. I throw it together in the Instant Pot, and dinner’s on the table in minutes with barely any mess
Inside-Out Egg Roll (Instant Pot Style)

Cook Time: 7 mins (plus pressure build/release)

Ingredients
- 1 lb breakfast sausage (1 tube)
- 1 small yellow onion, sliced
- 1 (14 oz) bag coleslaw mix (cabbage + carrots)
- 1 tbsp ground ginger
- 1 tbsp garlic powder
- 2 tbsp soy sauce (or more to taste)
- Optional: drizzle of sesame oil or chopped green onions for garnish
Instructions
- Sauté the sausage in the Instant Pot on Sauté mode until browned and cooked through. Break it up as it cooks.
- Add onion and cook 1–2 minutes until slightly softened.
- Stir in ginger, garlic powder, and soy sauce.
- Add coleslaw mix on top but don’t stir. Lock the lid.
- Pressure cook on High Pressure for 0 minutes (yes, zero!). It’ll cook while pressurizing.
- Quick release when done. Stir everything together.
- Optional: Top with green onions or a drizzle of sesame oil.
Serving Suggestions
- Wrap it in lettuce or tortillas
- Serve over rice or ramen
- Add a fried egg on top for breakfast-style flair
- Eat it right from the bowl like the no-fuss champ you are
