One-Pot Beef & Broccoli Stir-Fry
This One-Pot Beef & Broccoli Stir-Fry brings a takeout favorite to your RV kitchen with fresh ingredients and easy cleanup. It’s quick to cook on a portable burner or RV stovetop, uses minimal ingredients, and pairs perfectly with instant rice or noodles. Satisfying and savory — just the thing after a day of adventure!
Ingredients (Serves 2–3)
Ingredients:
▢ ¾ lb thinly sliced beef (flank steak or sirloin work well)
▢ 2 cups fresh broccoli florets
▢ 1 small bell pepper, sliced (optional)
▢ 2 tbsp soy sauce
▢ 1 tbsp oyster sauce (optional for richer flavor)
▢ 1 tbsp hoisin sauce or teriyaki sauce
▢ 2 garlic cloves, minced
▢ 1 tbsp cornstarch
▢ 2 tbsp vegetable oil (or olive oil)
▢ ¼ cup water
▢ Cooked instant rice or noodles, for serving
Directions:
- Prep Beef: In a bowl, toss the sliced beef with cornstarch and 1 tbsp soy sauce. Let sit for 5–10 minutes while prepping veggies.
- Cook Beef: Heat 1 tbsp oil in a large skillet over medium-high heat. Add beef and sear for about 2–3 minutes until browned but not overcooked. Remove and set aside.
- Stir-Fry Veggies: Add remaining oil to the pan. Sauté garlic for 30 seconds, then add broccoli and bell pepper. Stir-fry for about 3–4 minutes. Add ¼ cup water and cover the pan for 2 minutes to steam veggies tender.
- Combine: Return beef to the skillet. Add remaining soy sauce, oyster sauce, and hoisin or teriyaki sauce. Stir everything together for 1–2 minutes until coated and heated through.
- Serve: Spoon over cooked rice or noodles and enjoy hot!
