No Bake Mini Cheesecakes
No-Bake Mini Cheesecakes are a delightful treat with a rich, creamy, and tangy filling nestled in a buttery, crisp graham cracker crust. Served in individual cups, these make-ahead desserts are simple to prepare yet irresistibly delicious. Perfect for gatherings, they’re a fun and easy way to enjoy a sweet indulgence—whether by a crackling campfire or at any cozy get-together with friends and family.
Ingredients:
▢ Graham Cracker Crust
▢ 1 1/2 Cups Crushed Graham Crackers
▢ 1/4 Cup Granulated Sugar
▢ 6 Tablespoons Melted Butter
Cream Cheese Filling
▢ 8 Ounces Cream Cheese, Room Temperature
▢ 3/4 Cup Sweetened Condensed Milk, Approx. 1/2 of a 14 oz. can
▢ 2 Tablespoons Lime Juice
▢ 1/2 Teaspoon Vanilla extract
Directions:
- Drizzle melted butter into finely crushed graham cracker crumbs and add some sugar. Mix well. Press into the bottom of the plastic wine cup (using the bottom of a shot glass makes this super easy) and refrigerate for 15 minutes.
- Blend softened cream cheese, sweetened condensed milk, lemon juice, and vanilla until creamy. Spoon mixture on to chilled crust and refrigerate at least 4 hours. Serve with topping of choice!
