Grilled Street Corn
Grilled Street Corn (Elote) is the perfect RV-friendly side—quick, flavorful, and easy to make with just a few staples. Topped with a zesty mayo-lime sauce, cotija cheese, and chili powder, it’s a tasty upgrade for your campfire meals.

Prep Time: 5 minutes
Ingredients:
▢ 4 ears of corn, husked
▢ ¼ cup mayonnaise
▢ 1 tablespoon lime juice (about half a lime)
▢ ½ teaspoon chili powder (adjust to taste)
▢ ¼ cup crumbled cotija cheese (or feta as a substitute)
▢ 1 tablespoon chopped cilantro (optional)
▢ 1 tablespoon melted butter (optional, for brushing corn before grilling)
▢ Lime wedges, for serving
Directions:
- Heat your grill (or RV grill pan) to medium-high.
- Lightly brush corn with melted butter (optional). Place ears directly on the grill grates. Turn every 2–3 minutes until all sides are charred, about 10–12 minutes total.
- In a small bowl, mix mayonnaise and lime juice until smooth.
- Remove corn from grill. While hot, slather each ear with the mayo-lime mixture. Sprinkle generously with chili powder, cotija cheese, and cilantro (if using).
- Plate with lime wedges for squeezing on top. Best eaten immediately while warm!
