Apple Cider-Bran Muffins
These Apple Cider-Bran Muffins are a perfect RV snack, made with wholesome ingredients like bran cereal, apple cider, and maple syrup. Easy to prepare, freeze well, and perfect for a cozy breakfast on the road, pair them with a warm cup of coffee while you enjoy scenic views from your RV.
Ingredients:
▢ 1 1/2 c whole bran cereal
▢ 1 c apple cider or juice
▢ 1 beaten egg
▢ 1/4 c cooking oil
▢ 1/4 c maple-flavored syrup
▢ 1 c all-purpose flour
▢ 2 tsp baking powder
▢ 1 tsp ground cinnamon
▢ 1/4 tsp baking soda
▢ 1/8 tsp salt
▢ 1 medium apple, cored and finely chopped (1 cup)
Directions:
- In small bowl combine bran cereal and apple cider; let stand 3 minutes or until the liquid is absorbed. Stir in the egg, oil and maple-flavored syrup; set aside.
- In a medium bowl stir together the flour, baking powder, cinnamon, baking soda and salt. Make a well in the center. Add the bran-apple cider mixture all at once, stirring just until moistened (batter will be thick). Fold in the chopped apple.
- Grease muffin cups; fill 2/3 full. Bake in a 400 degree oven for 20 – 25 minutes. Remove from pans; cool.
- Pack 1 or 2 muffins together in small clear plastic bags or freezer bags. Store several days at room temperature or up to 4 months in the freezer (frozen muffins will thaw at room temperature in 4 – 6 hours).
